Exactly a month ago, we traveled across San Diego as we enjoyed a week-long family vacation for my wife’s youngest brother’s wedding. Something that made our road-trip in the 2016 Mitsibishi Outlander a bit unique was that we’re a vegan/vegetarian family.

I am a vegan; my wife and kids are vegetarians.

So when it comes to traveling, especially on the other side of the country, since we live in the Nashville area, it is vital that we plan out our stops accordingly to where we can eat.

We have to make sure that wherever we dine, there are options for those who don’t eat meat (vegetarian), as well as those who additionally also don’t eat eggs or dairy (vegan).

My wife did about half our research online before we left. Then once we arrived at our hotel, I sat inside the Mitsibushi Outlander in the parking lot for a solid 30 minutes, searching “plant-based” options in the San Diego area and plugging them into the GPS.

Fortunately, we were staying only a few miles from a glorious place called Jimbo’s… Naturally! It served as our base. We drove there each morning, stocking up on our snacks for the day- we even had a few meals there as well.

I loved how they had a made-to-order sandwich/wrap/veggie burger bar!

They even carried vegan marshmallows, Dandies, which we used for the family bonfire on the beach.

The first actual restaurant we stopped at was Oggi’s, which was where the family first reunited. (My wife is one of 9 siblings.)

I discreetly and privately told my waiter that I was a vegan. He went back to the cooks and reported back to me that they could do a veggie pasta dish for me. I was also “feeling like being bad,” as my wife would say, so I ordered a big plate of fries too.

They were so good. And because I’m a nice dad, I even shared them with my son.

Next up was Wahoo’s Fish Taco, which despite the name, was extremely prepared for vegans like me. I had a dish with tofu, veggies, and beans. It was good- like an Asian/Mexican fusion.

The next restaurant on our trip was Fig Tree Café, which served up a great looking, and great tasting, vegan burger. I even was able to get Kombucha on tap!

My wife loved her French Toast. It was a fun place to dine.

In the same shopping center, there is also a convenient Trader Joe’s, as well as Sammy’s Woodfired Pizza & Grill, where we enjoyed the ambiance and food so much, we went back at 2nd time, taking one of my sisters-in-law’s family with us.

They accommodated my dietary needs by actually having Daiya cheese as a substitute for dairy cheese for our pizza. And my wife and I really enjoyed their Asian salad as well.

Dear Jack,

Mommy showed me a worksheet you completed last week, in which you described and illustrated what you did over the 4 day Columbus Day weekend. Immediately, I noticed the section you devoted to my Grandma’s funeral.

You clearly drew her casket, with the elaborate flowers that were on top, with one of the pews next to it. I am definitely impressed by the details you put it to that.

I know that when Nonna finds out about your drawing, she will especially appreciate the fact you remembered the flowers, because it was very important to Nonna that Grandma’s casket had beautiful and elaborate flowers on top of it.

You noticed those flowers enough to include them in your drawing. That’s amazing to me.

Throughout history, people have naturally created art to preserve images of things they value. You valued those flowers. You valued being there at my Grandma’s funeral.

You also drew Nonna and Papa’s house, and the pool next to it.

And apparently the road trip back to Tennessee was of value to you as well, since you made sure to document a picture of us driving back home, from Alabama where the funeral was.

I love how you did your best to spell:

“I with at my nons.” (I went to my Nonna’s.)

“Foonrul.” (Funeral.)

“My friz: Jack, Jine, Veru.” (My friends: Jack, Jenna, Vera.)

“I with hom.” (I went home.)

“I had fun.” (Correct.)

Since your school was out both Friday and Monday for Columbus Day, you went to the extended day program at your sister’s daycare.

You enjoyed being there so much! You were so excited to go back on Monday, having been there Friday. As your drawing indicates, you very much valued spending the day with your friends Jenna and Vera.

I will always value your artwork. It’s never just about your drawing skills. Instead, it’s about the stories your drawings tell.

Dear Holly,

We had just left the San Diego Zoo Safari Park when Grandma (Mommy’s Mommy) decided that after a morning in the California sun, frozen yogurt sounded like a good idea.

So we used the GPS on the 2016 Mitsubishi Outlander to find a glorious place called The Golden Spoon, a franchise which has apparently been in existence since 1983.

I’ve learned that “pay by the ounce” frozen yogurt shops are indeed safe for me as a vegan, because they always have a sorbet option and fruit selections for my toppings.

We all were very pleased with our choices and it turned out that Grandma had made a good call in suggested we go out for frozen yogurt.

Your brother Jack wanted to eat outside so I took him out to the patio while you, Mommy, and Grandma remained on the sofa inside.

After Jack and I finished our treats, Jack wanted to come see what you were up to.

Fortunately, I took several pictures of what happened next, on both my phone and camera. It made me so proud and gracious as the dad of such precious children.

I captured the moment, as your brother hugged you and held you close. The look on your face clearly revealed how fascinated you are by him. You are truly amazed by your brother. And similarly, he loves to engage you in being cuddled up together.

It’s official: I have cuddlebugs for kids.

And this isn’t something that only happens occasionally. Instead, he does this daily with you.

But in that paramount moment, I felt required to send out an Instagram pretty much immediately, sharing, “Whole lot of love.”

It could have simply been a fun trip for frozen yogurt, but fortunately, I saw a heart-warming moment that I will never forget.

While in San Diego two weeks ago for your Uncle Jake’s wedding, Grandma joined us in the 2016 Mitsubishi Outlander for a drive to the San Diego Zoo Safari Park; the 3rd row seat was very useful. It was so nice having Grandma there to help with your baby sister.

The 1,800 acre Safari Park was such a great speed for you. Even aside from the animals, it was such a beautiful place to be. And you didn’t mind doing so much walking, because it was it sort had a treehouse feel.

One of the things that really sets apart the San Diego Safari Park from a typical zoo is that in addition to its wondrous exhibits, there is also ride that took us through the free-range of “Africa” where we saw giraffes, antelopes, and rhinos in what appeared to be their natural habit.

Conveniently, the climate and landscape of San Pasqual Valley of San Diego appears to be similar to Africa’s. In fact, several times during the ride, I had to remind myself we were in southern California, not Africa.

Mommy and I had agreed to give you a $20 allowance to spend on souvenirs during our entire trip. We suggested you save it for the San Diego Zoo Safari Park, knowing they’d surely have an impressive collection of stuffed animals for you to consider.

We did see a giant life-size tiger, but it was a little out of your prize range, at $1000. But truly, you fell in love with the last remaining Fennec Fox.

I think you and I both considered the actual Fennec Foxes to be our favorite animal at the Safari Park.

You asked for help naming her. I suggested Fifi, and you accepted.

Mommy and I couldn’t take our Kindergartner son to San Diego without taking him to Legoland, could we?

Grandma helped us out by staying in our hotel room with your baby sister, while Mommy and I spent half the day with you, at what had to be for you the boy equivalent of Disney Land.

Seriously, I could see that it was a nearly 6 year-old boy’s dream come true. Undeniably, Mommy and I loved it too!

We started out by going a ride that took us through the Lego versions of popular traditional fairy tales. It’s so cool to see everything made out of Legos.

I didn’t realize there would be so many rides there, but that’s mainly what we did. We went on a roller coaster, a train ride, a boat ride, a laser tag ride, and a Lego version of the tea cup ride at Disney Land.

Mommy and I also let you play a carnival game, as you always love try to win a prize. Granted, we only let you play the games where “everyone wins a prize.” You were very proud of the dragon you won.

You were mesmerized by the miniature version of the world. They even had a Lego layout of all the Star Wars movie.

I loved the giant Chewbacca, as well.

We finished up our visit to Legoland with the build-a-boat exhibit. You and I built a Lego boat, then got to race it down the chute alongside other kids’ Lego boats.

Mommy let you buy a $4 Pixel set to work on during the drive back to our hotel. It was funny because Mommy and I sat up front together, while you worked intensively in your own work station in the 3rd row seat in the very back of the 2016 Mitsubishi Outlander we drove.
