Let’s talk pizza!  Our family LOVES pizza and our favorite restaurant to dine at currently is Mellow Mushroom.  They are vegan and “family friendly” and we’ve been to several here in the Southeast (in Tennessee, North Carolina, Florida and Alabama, as a matter of fact).  Pizza is often a staple for us on Friday or Saturday nights when we are up for something quick and easy to make.  Now I don’t claim to be Betty Crocker, so I will tell you now that 9 times out of 10 I do buy my pizza dough (as opposed to making it).

Where we live you can buy pre-made pizza dough from Publix, Whole Foods, or Trader Joe’s.  Whenever possible, I generally buy our pizza dough from Trader Joe’s because it is vegan, the ingredients are simple and pronouncable, it’s really good and you can’t beat the price ($1.19 here in Nashville).  I try to make a trip to TJ’s about once every other month and stock up on essentials like pizza dough (it’s perfectly fine to put it in the freezer and then thaw out the day you will use it).  And I will say that not only can you use the dough for making pizzas and calzones, but they are great to make into breadsticks to go along with soup in the winter.

To make a vegan veggie pizza, here’s what I do:

1- Preheat the oven to 400* and grease a medium sized pizza pan with a bit of Extra Virgin Olive Oil.

2- Pat the dough in your hands and pull from each side to stretch it out, and then spread it out onto your pizza pan.

3- Add the sauce of your choice (we generally buy jarred organic pasta sauce from either Kroger, TJ’s or Whole Foods . . . sometimes you can get it for $2.19 a jar at Kroger and all of the ingredients are ingredients that are real).

4- Cut up veggies of your choice and sprinkle randomly over the sauce . . . our veggie pizza staples are onion (cut into thin, long slices), multi-colored bell peppers (cut into thin, long slices), and tomatoes (cut thin) to layer on top.  Sometimes we add mushrooms, but those are only for nights we feel a little crazy and step outside of the norm.

5- Slice up some Kalamata olives and sprinkle all over.

6- Shake a little salt, a little cracked pepper, and either an Italian herb blend or simple oregano other the entire pizza.  If you have fresh basil, go ahead and cut some of that up and spread it over the pizza.

7- Toss it in the oven for 10-15 minutes (depending how crispy or soft you like your crust).

8- Eat and serve with a side salad.

For Jack’s pizza, we tend to go a much simpler route (because he is 4 and a very picky eater).  I generally break the dough in half and put the other half in the freezer for another night.  I grease the pizza pan, work out the dough in my hands and spread it onto the pan.  I add the sauce (and I try to opt for a sauce that specifically has some kind of extra veggie, like a sauce with bell peppers or mushrooms).  Then I top it with mozzarella cheese . . . or almond cheese which still has casein in it so it’s not vegan, but seems a bit better for him than the mozzarella.  I bake it anywhere from 10-15 minutes and serve his with cut up apples or a side of applesauce.

Here again, if you are not into the whole vegan thing (I get it, I really do) and just want to make a good, meaty or cheesy pizza . . . just follow the first few steps and then add your preferred toppings.  Or if you are a super meat lover and want to try inserting a veggie option in every now and then, try this, you won’t be disappointed (unless you are, then in which case, I can’t help you there; I can just vouch that we like it)!

This past weekend as soon as we got in the doors of the Williamson County Fair, we headed straight over to the Lego tables to see how your entry did in the competition.

Right away, I blurted out to you and Mommy, “Jack, you won 2nd place!”

That means out of all the 4 to 8 year-olds in Williamson County who entered the competition, the judges thought your entry was the 2nd best. Seriously, that’s a huge deal!

I love the fact that you competed with kids who were nearly twice your age and still won.

One of the main things the judges were looking for was originality. I can solemnly testify the 3 “space vehicles” you created were completely your own.

Mommy and I had no part in helping you at all.

Building Legos is what you do. You’re constantly building new creations every day; only to tear them apart and come up with new ones by the end of the week.

I’ve actually seen you make more complicated Lego inventions than the ones you entered. The winning entry just happened to be the collection of the ones you made that particular week.

Mommy and I have been saying it for a while now… and your teacher Ms. Aimee has been saying it too…

“We have a future engineer on our hands. What else would Jack possibly be?”

You love to make your own Lego inventions- and they always have to be symmetrical. No one taught you that stipulation, but it’s an unbreakable law in your code to building Legos.

With all that being said, you’re just as talented at building actual Lego sets with instructions. You recently spent some of your own money on a new set that was targeted for ages 8 to 14.

I barely helped you at all. Actually, I was relieved you pretty much took care of building it because I might have gotten too frustrated to finish it.

You and I made an unboxing video for the set: Legend of Chima: Eris’ Fire Eagle Flyer.

Your 2nd place Lego award is your first ever real award! Mommy and I just couldn’t be prouder of you!

Oh yeah, and while we were at the fair, you also won your very first game prize. You popped balloons with darts and got to pick out an animal: You named her Libby the Lizard.

You’re a natural!

We also had a lot of fun this week because we celebrated Mommy’s 34th birthday at Whole Foods, with vegan pizza and cake!

Dear Jack,

Last Saturday we met up with some of your friends from your old preschool, at our favorite place to dine out: Mellow Mushroom.

Other than Whole Foods, it’s one of the few places near where we live that openly accommodates to my vegan lifestyle as well as you and Mommy being vegetarians. Not to mention, we’re Dave Ramsey followers so it’s hard to justify eating out every week when we’ve got a mortgage to pay off early

We rarely eat out, so when we do, it’s always a special event; like when we moved into our new house… and for Valentine’s Day.

It was a great place to catch up with your friends’ parents; meanwhile, you and your friends enjoyed hanging out underneath the table.

Right after I had just paid the bill at the end of the meal, your friend Madison’s dad mentioned to me there was something going on behind me, near the front door.

I looked over, then shouted to you:

“Jack! There’s a mushroom man! Come with me right now!”

We scurried over to the scene. There was a staff worker dressed in the restaurant’s mascot costume; as Mel O. Mushroom.

It was quite an intriguing spectacle… even for me to witness.

You were obviously fascinated. I was somewhat surprised you showed no hint of fear whatsoever.

The Mushroom Man gave you high fives; you gladly participated. You stood there in awe of his shroomy splendor.

It’s not every day you happen upon a 6 foot tall mutant mushroom in the middle of downtown Franklin, Tennessee.  I suppose he was there to participate in the St. Patrick’s Day Festival.

You tried to look up his… mushroom skirt, for lack of a better term; to try to figure out whether it was a real person- or an actual, genuine mutant mushroom person.

As we left Mellow Mushroom, you had to ask, “Daddy, was that a real man?”

I explained that it was a person in a costume, which was what you thought; but I can still see you were having a little bit of trouble digesting that truth. After all, I too would want to believe the Mushroom Man was real.

Then on Saturday, which actually was Valentine’s Day, our family went back to Mellow Mushroom for a special family dinner.

When we first arrived there in downtown Franklin, you wanted to check out the animals in the toy crane machines. Amazingly, we found a honey badger! (Just earlier I had introduced you to honey badgers, thanks to a PBS documentary on Netflix.)

While we waited for our food, you enjoyed figuring out how to use your new Spiderman binoculars which you received from a new friend at your new school.

We finished off the weekend with some fun pastas we found while buying our new sofa at World Market. By combining Valentine pasta and Space pasta, we accidentally ate a lunch that compliments one of our new signs for our house:

It was a very fun, family Valentine’s Day weekend for us. Mommy and I even got you a new animal, Slush; as well as a little Lego train which you quickly built without any of my help.

Dear Jack,

Last Friday after work, I drove straight to Mellow Mushroom in downtown Franklin; which is only about 20 minutes from our new house.

Grandma wanted to take our family out to dinner to help celebrate us moving in our new home.

I suggested Mellow Mushroom, already familiar with the idea that it was “vegan friendly,” though we hadn’t eaten there since I became a vegan nearly 2 years ago.

Turns out, it was one of the best meals I’ve had eating out at in a long time. I was pleasantly delighted to be there; and so were you!

You enjoyed getting to see “the Mushroom Man,” who was made completely out of spare car parts.

I liked their kids’ menu. You ordered a cheese pizza with a side order of steamed broccoli… which you ate all of.

As for me, I had a delectable vegan pizza which came with vegan cheese, tofu, and plenty of veggies.

Plus, I’ve never been to a Mellow Mushroom when the service wasn’t perfect. The staff is always so helpful, yet laid back.

I almost forgot… Mellow Mushroom is where Mommy and I went to dinner the night I proposed to her!

Back in January 2008, I had planned to propose at Saffire restaurant at the Franklin Factory, where we had first met. However, the day of, I found out that restaurant was closed on Monday’s.

So we had dinner at that same Mellow Mushroom there in downtown Franklin, then we drove to the Franklin Factory, where Mommy said yes when I proposed.

While we’re obviously not new to Mellow Mushroom, now that we are a plant-based family I feel that we have now discovered our official go-to eat-out restaurant closest to our new home.

Obviously, you know we don’t go out often, but when we do on special occasions, I’d be fine with going to Mellow Mushroom every time. We’re actually going back this Saturday night for a fun, family Valentine’s dinner!
